In addition to operating the market, this business also acts as a wholesale distributor for the local goods that it sells. On the Geisert Farm, which is located just east of Washington, Missouri, hogs have been bred in a manner that has undergone very little modification since 1916. Pigs are raised in “A” frame houses in fields that had a crop harvested from them in the season prior to the one in which they are being raised. When it comes to taking care of the herds, though, everything is still done by hand—and there are a lot of hands involved. These days, feed is transported using sophisticated equipment rather than horses, but the process is mostly the same. In the same way that it was done more than 90 years ago, you can see members of many generations out in the field assisting with the sorting and feeding of the pigs.
